- 12-15 baby red potatoes, boiled, cubed
- 1 pound fresh green beans, steamed and cooled
- 3 hard-boiled eggs, diced
- 6 slices gluten-free, nitrate-free bacon, cooked, chopped
- 1/2 red onion, sliced
- 1/2 cup olive oil
- 1/4 cup red/white vinegar
- 3 Tablespoons spicy brown mustard
- Sea salt and pepper to taste.
Combine all except olive oil and mustard. Whisk mustard into olive oil and add to other ingredients. Gently combine and enjoy!
