• 12-15 baby red potatoes, boiled, cubed
  • 1 pound fresh green beans, steamed and cooled
  • 3 hard-boiled eggs, diced
  • 6 slices gluten-free, nitrate-free bacon, cooked, chopped
  • 1/2 red onion, sliced
  • 1/2 cup olive oil
  • 1/4 cup red/white vinegar
  • 3 Tablespoons spicy brown mustard
  • Sea salt and pepper to taste.

Combine all except olive oil and mustard.  Whisk mustard into olive oil and add to other ingredients.  Gently combine and enjoy!
